Zesty Greek Pasta Salad

This great side dish is perfect for summer gatherings. Make it a light lunch with the addition of chicken or steak.
 

Ingredients

  • 16 oz tri-colored rontini pasta, cooked
  • 1 small jar marinated artichokes, drained and chopped
  • 5 small Roma tomatoes, chopped
  • 1/2 medium green pepper, diced
  • 1 tub crumbled feta cheese
  • 1 small can ripe black olives, drained and sliced
  • 1/4 10 oz package frozen chopped spinach, thawed and squeezed of excess water
  • 1 tbsp lemon juice
  • 1/2 bottle Italian or Greek style dressing
  • 1 tsp garlic powder
  • 1 packet zesty Italian dressing mix

Method

Cook pasta according to directions on package, drain well, and rinse with cold water until pasta is cool. Place pasta in a large bowl, and combine with other ingredients and chill until well marinated; about 2 hours.
