Yin-Yang Exotic Salad

A colorful mix of vegetables and fruit with rotisserie chicken, feta cheese and a raspberry hazelnut vinaigrette.
Ingredients
- Romaine lettuce
- Rotisserie chicken, diced
- Mandarin oranges, drained
- Red bell pepper, julienne
- Orange bell pepper, julienne
- Green table onions, diced
- Red onion, diced
- Glazed almonds
- Feta cheese, crumbled
- Raspberry hazelnut vinaigrette
- Cilantro, optional

Method
In a clear trifle bowl (for presentation, or any regular bowl), add a generous layer of chopped romaine lettuce. Add in layers, chicken, oranges, red bell pepper, orange bell pepper, red onion and green onion. Add a layer of glazed almonds and a layer of crumbled Feta cheese. Drizzle liberally with vinaigrette.
Notes: Before serving you can gently mix the bowl of salad to combine all ingredients or just leave it layered.
