Winter Green Salad and Green Apple Vinaigrette

A great summer salad full of bitter greens and a wonderful light vinaigrette made of green apples and parmesan cheese.
Ingredients
- 1 sm. head escarole, bite size pieces 2 Belgian endive, bite size pieces
- 2 celery stalks, diagonal thin slices 1 Granny Smith apple,halved, cored and thinly sliced
- Shaved Parmigiano Reggiano
- 2 tbs. cider vinegar
- 2 tbs. white whine vinegar
- 1/2 shallot, finely diced
- 1/2 C olive oil salt and pepper

Method
Combine greens, celery, apples and cheese in large bowl. Whisk together both vinegars and shallots. Slowly whisk in oil and season with salt and pepper. Toss salad ingredients with some of the vinaigrette.
