Veggie Macaroni Salad

Macaroni noodles, cheddar cheese, peas and egg all tossed in a dressing of mayo, yogurt, and mustard.
 

Ingredients

  • 2c. uncooked elbow macaroni
  • 1 large tomato, seeded & chopped
  • 1c. frozen peas, thawed
  • 1/2c. cheddar cheese
  • 1/2c. chopped celery
  • 1 hard cooked egg, chopped
  • 2 green onions, sliced
  • Dressing:
  • 3/4c. mayonnaise
  • 1c. plain yogurt
  • 2 tbs. sugar
  • 1 tbs. prepared mustard
  • 1/8 tsp. celery seed

Method

Cook macaroni according to pkg. directions; drain & rinse in cold water. In a large bowl, combine macaroni, tomato, peas, cheese, celery, egg & onions. In a small bowl, combine the dressing ingredients. Pour over macaroni mixture & toss to coat. Refrigerate until serving.
