Two Bean Salad with Garlic, Spinach and Tomatoes


Baby spinach is tossed with grape tomatoes and canned beans--great northern & kidney--and seasoned with minced garlic & olive oil.



Ingredients:

  • 1 cup packed fresh baby spinach, washed, dried and coarsely chopped
  • 1 cup grape tomatoes, washed, dried and halved
  • 1 can great northern beans, drained and rinsed
  • 1 can light red kidney beans, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 1 or 2 cloves garlic, minced
  • Kosher salt and freshly ground pepper, to taste

Method

Place spinach in a medium salad bowl; add tomatoes and beans to bowl. Combine and add olive oil, garlic, salt and pepper. Toss lightly to combine. Served right away or chill to mingle flavors. More olive oil can be added if salad is too dry.

Notes: Two cloves of garlic will give a very strong garlic taste, so proceed with caution.
