Tuscan Bread Salad With Olives

Crusty Italian bread, cucumbers, tomatoes, olives and mozzarella cheese, marinated in a red wine vinaigrette.
 

Ingredients

  • 1 loaf crusty Italian bread, cut into one inch cubes
  • 2 cucumbers peeled, seeded and diced
  • 1 dozen small tomatoes, diced
  • 1/4 cup red onion, diced
  • 1/4 cup sliced black olives, drained
  • 1/4 cup sliced green olives, drained
  • 1 bunch fresh basil, coarsely chopped
  • 22.5 oz container fresh mozzarella balls
  • 1/2 cup reserved mozzarella marinade
  • 1/2 cup red wine vinegar

Method

Allow bread cubes to sit overnight on baking sheet. In a large salad bowl combine bread cubes with cucumbers, tomatoes, onion, olives and basil and set aside. Remove cheese balls from marinade and set aside. Place reserved marinade in mixing bowl and whisk in vinegar. Pour over salad and toss gently. Allow to stand for thirty minutes in refrigerator. Right before serving add mozzarella balls to salad and mix gently.
