Ingredients:
| 1 | Loaf Crusty Italian Bread, cut into one inch cubes |
| 2 | Cucumbers Peeled, seeded and diced |
| 1 | Dozen Small Tomatoes, diced |
| ¼ cup | Red Onion, diced |
| ¼ cup sliced | Black Olives, drained |
| ¼ cup sliced | Green Olives, drained |
| 1 bunch | Fresh Basil, coarsely chopped |
| 22.5 oz | Container Fresh Mozzarella Balls |
| ½ cup | Reserved Mozzarella Marinade |
| ½ cup | Red Wine Vinegar |
Directions:
Allow bread cubes to sit overnight on baking sheet. In a large salad bowl combine bread cubes with cucumbers, tomatoes, onion, olives and basil and set aside. Remove cheese balls from marinade and set aside. Place reserved marinade in mixing bowl and whisk in vinegar. Pour over salad and toss gently. Allow to stand for thirty minutes in refrigerator. Right before serving add mozzarella balls to salad and mix gently.
