Turkish White Bean Salad

Cannellini beans are combined with grape tomatoes, onion, celery, sweet red pepper and parsley for a colorful salad that's dressed with an olive oil, lemon and vinegar dressing.
Ingredients
- DRESSING
- 3 Tbsp olive oil
- Juice of 1 lemon (about 3 tbsp.)
- 1 1/2 Tbsp red wine vinegar
- 1 tsp minced fresh garlic
- 1 tsp honey
- Salt and pepper, to taste
- SALAD
- 2 15.5 oz cans cannellini beans
- 1 cup halved grape tomatoes
- 1/4 cup diced red onion
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/2 cup chopped flat-leaf parsley
- Pita Chips

Method
Whisk dressing ingredients together and toss with salad ingredients in a large bowl. Chill at least 1 hour before serving. Serve with pita chips, if desired.
Notes: I had a similar salad to this at a Turkish restaurant in my neighborhood. They offer it as one of their meze choices. It's very good with pita chips.
