Tropical Greek Salad

This salad combines Greek ingredients such as feta cheese and kalamata olives with pineapple for a tropical touch. It also has greens, strawberries, grapes, mandarin oranges, red bell pepper, cashews, peppers, hard cooked eggs and croutons.
 

Ingredients

  • 1 head iceberg lettuce
  • 3 Heads Romaine lettuce
  • 1 box of organic mixed baby greens
  • Cherry tomatoes
  • Feta Cheese (in cubes or crumbled)
  • Kalamata or black olives, pitted
  • Pineapple chunks
  • Strawberries, sliced
  • Handful of purple grapes
  • One can of Mandarin oranges, drained
  • Red sweet pepper, julienned
  • Prepared or purchased Red Potato salad
  • Pepperoncini
  • Banana peppers, optional
  • Hard cooked eggs, cut in wedges
  • Cashews (a handful)
  • Garlic croutons, optional
  • Few shreds of baby carrots
  • Desired salad dressing (optional)

Method

Wash and dry the greens. Tear the lettuce and put all the greens in a very large container. Toss together; start putting in other ingredients as your imagination hits your fancy (remember your inner artist)--Cherry Tomatoes, Feta Cheese, Kalamata or black olives, pineapple, mandarin oranges, strawberries, purple grapes, red pepper. Make a depression in the center of the salad so you can fit in the Potato salad; arrange remaining ingredients around the potato salad--Hard cooked egg wedges and cashews. At the end put in the garlic croutons, just a few. Also, garnish with few shreds of baby carrots. Use any dressing your heart desires. I use Sweet Vidalia Onion dressing (Ken's brand) or eat it just like that. It is very colorful and refreshing. It is a meal in itself!
