Tropical Cheese Salad

Cottage cheese and canned fruit are served with lettuce, sprinkled with cheese and sunflower seeds, & drizzled with mayonnaise and sour cream.
 

Ingredients

  • Salad Dressing:
  • 2 Tablespoons juice from canned tropical fruit (see below)
  • 3 Tablespoons mayonnaise
  • 3 Tablespoons sour cream
  • Salad:
  • 4 lettuce leaves
  • 2 cups cottage cheese
  • 2 cups canned tropical fruit
  • 4 teaspoons grated cheddar cheese
  • 4 teaspoons roasted salted sunflower seeds
  • Ground nutmeg

Method

Stir together salad dressing ingredients in a small bowl; set aside. For each salad (4 servings), Place a lettuce leaf on plate or in salad bowl. Add 1/2 cup cottage on top. Add 1/2 cup tropical fruit on top of cottage cheese. Sprinkle 1 teaspoon grated cheddar cheese over fruit. Drizzle about 2 tablespoons of the prepared dressing over the salad. Sprinkle with 1 teaspoon sunflower seeds and a little nutmeg.

 

Notes: This recipe is based on a favorite my mother made. Over the years, I've experimented with substituting and adding ingredients and came up with this version.
