Tortellini-Spicy Shrimp Pasta

Spinach and cheese tortellini is combined with cayenne-sprinkled cooked shrimp, sliced cucumber, red onion, feta cheese, tomatoes and Greek dressing.
 

Ingredients

  • 1 bag spinach and cheese tortellini
  • 3 cups water
  • 1 pound peeled and deveined shrimp
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper
  • 1 cucumber
  • 1 large red onion
  • 4 oz feta cheese, crumbled
  • 4 oz grape tomatoes
  • 1 bottle Greek dressing
 
Method

Add water to a large saucepan, bring to a boil; add tortellini. Cook about 6 minutes, until pasta is done. Drain and set aside to cool. Saute shrimp in olive oil; add salt, pepper, and cayenne pepper; cook just until shrimp are done. Set aside to cool slightly. Peel and thinly slice cucumber and onion. Once pasta and shrimp are cool, combine in a large bowl along with cucumber, onion, feta cheese, tomatoes and Greek dressing. Toss and serve at room temperature, or refrigerate at least 2 hours.

 

Notes: Some people like it cold, but my family and I like it served at room temperature.
