Tortellini Salad with Champagne Vinaigrette

Refreshing salad with cheese tortellini fresh vegtables and microgreens.

  • Prep Time: 30 min
  • Cook Time: 1 hour (including cooling pasta)
  • Total Time: 2 Hrs (including refrigeration time)


2 cups Buitoni Three Cheese Tortellini
8 Cherub Tomatoes, sliced
2 Sprigs of Fresh Dill
1½ tsp Balsamic Capers
¾ cup Asparagus Tips
½ Large Avocado, cubed
5 Tbl Champagne Vinaigrette
Salt & Pepper, freshly ground
½ tsp Lemon Zest
¼ tsp Freshly Grated Nutmeg
¾ cup Micro Greens


Prepare Buitoni Three Cheese Tortellini according to package directions. Strain and let pasta cool.

After pasta has cooled combine with: tomatoes; dill; capers; asparagus; avocado; vinaigrette (reserve 1 tsp) and salt and pepper to taste.

Refrigerate for at least 20 minutes.

Plate above mixture with remaining ingredients in this order: Micro Greens; vinaigrette and lemon zest.
