Tomelon Bowl

The tomelon bowl is made of tomatoes and watermelon and topped with a great goat cheese vinaigrette.
 

Ingredients

  • 2 medium size vine-ripe tomatoes, large dice2 medium size vine-ripe yellow tomatoes, large dice1 small seedless watermelon, large dice1 medium size red onion, quartered and thinly sliced2 tablespoons chopped fresh Italian parsley1 4 oz package goat cheese, crumbled1/2 cup extra virgin olive oil1/4 cup balsamic vinegar1 clove garlic, chopped2 tablespoon sugar1/2 teaspoon kosher salt1/2 teaspoon fresh ground black pepper

Method

In large mixing bowl, combine first 6 ingredients. Set aside.In blender, add remaining ingredients and blend well. Pour dressing over tomatoes and toss gently. Let stand 30 minutes before serving.
