Tomato Salad


Chunks of roma or plum tomatoes, cucumber, bell peppers, onions & green olives are marinated in an olive oil & vinegar mixture with garlic and basil.



Ingredients:

  • 6-8 roma tomatoes
  • 1 cucumber
  • 1 each green and red pepper
  • 1 bunch of green onions
  • Green olives
  • 3 garlic cloves
  • About 1/2 cup olive oil
  • About 2 Tbsp red wine vinegar
  • Splash of balsamic vinegar
  • Splash of olive juice (brine from the green olives)
  • Salt and Pepper
  • Basil

Method

Cut tomatoes into bite-size chunks. Dice cucumber and peppers. Slice onion and olives. Mince garlic. Put everything in a bowl and toss. In a separate bowl mix olive oil, vinegars, olive juice and seasonings. Whisk to blend well; pour over vegetables and toss. Let it sit in refrigerator for at least 1/2 hour and toss again before serving.

Notes: Amounts of olive oil, vinegar and spices can be adjusted to taste.
