Tomato-Mozarella Fans

Fresh tomatoes are sliced from the tops, cutting to but not through the bottoms. Half-slices of fresh mozzarella are inserted and drizzled with oil.
 

Ingredients

  • 4 vine-ripened tomatoes
  • 8 oz fresh mozzarella cheese
  • 4 fresh basil leaves
  • 8 teaspoons extra virgin olive oil
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Method

Place a tomato stem side down on a cutting board. Make four slits in each tomato, from top to bottom, being careful not to cut all the way through. Using a sharp knife, slice mozzarella into thin rounds. Then cut each round in half. Insert one half-circle of cheese into the slits in the tomatoes. Spoon 2 teaspoons of olive oil across each tomato. Sprinkle with Kosher salt and black pepper. Top with a basil leaf. Serve immediately. Tomatoes have the best flavor if served (and stored) at room temperature.

 

Notes: Garden fresh tomatoes make this dish especially succulent! Make sure you purchase the mozzarella in a ball-shape, so that it is easy to slice into rounds.
