Three Melon Salad with Serrano Mint Syrup


This cool and refreshing salad marinates cantaloupe, honeydew and watermelon cubes in a honey-lemon syrup with serrano pepper.



Ingredients:

  • Syrup:
  • 1/3 cup sugar
  • 1/3 cup water
  • 1/4 cup fresh lemon juice
  • 3 tablespoons honey
  • 1/2 teaspoon finely minced serrano pepper (discard seeds)
  • 1/4 cup chopped fresh mint
  • 1 tablespoon grated lemon rind
  • Salad:
  • 4 cups cantaloupe, cubed 1"
  • 4 cup honeydew melon, cubed 1"  
  • 4 cups watermelon, cubed 1"

Method

To prepare syrup, combine first 5 ingredients in a small sauce pan. Bring to a boil and cook 3 minutes or until mixture is slightly syrupy. Remove from heat; stir in mint and lemon rind. Let stand 30 minutes. Strain syrup through a sieve over a bowl. To prepare salad, combine melon cubes in a large bowl. Add syrup and toss gently to coat. Cover and refrigerate 2 hours, stirring occasionally to redistribute syrup.
