This cool and refreshing salad marinates cantaloupe, honeydew and watermelon cubes in a honey-lemon syrup with serrano pepper.
To prepare syrup, combine first 5 ingredients in a small sauce pan. Bring to a boil and cook 3 minutes or until mixture is slightly syrupy. Remove from heat; stir in mint and lemon rind. Let stand 30 minutes. Strain syrup through a sieve over a bowl. To prepare salad, combine melon cubes in a large bowl. Add syrup and toss gently to coat. Cover and refrigerate 2 hours, stirring occasionally to redistribute syrup.
