Thai Beef Salad with Devil Lime Sauce


A mix of vegetables and fruit with slices of roast beef and pasta, served with a slightly spicy, Oriental style dressing.



Ingredients:

  • Salad:
  • 10 mint leaves, chopped
  • 2 ripe mangos, pitted, peeled and chopped into bite sized pieces
  • 3 medium tomatoes, chopped into bite sized pieces
  • 1/2 head cabbage, shredded
  • 2 avocados, pitted, peeled and chopped into bite size pieces
  • 2 cups cooked penne pasta, hot or cold (any variety of pasta may be substituted)
  • 3/4 cup peanuts
  • 1 pound cooked roast beef, medium to medium rare and thinly sliced
  • Sauce:
  • 1/3 cup freshly squeezed lime juice
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 1 teaspoon soy sauce
  • 1/4 cup chopped red onion
  • 2 red chili peppers, seeded and minced
  • 2 cloves garlic, minced
  • 2 tablespoons peanut butter
  • Garnish:
  • 24 whole fresh basil leaves, optional

Method

To prepare salad, gently mix all salad ingredients, except peanuts, together and spoon into a large serving bowl or platter. Mix all sauce ingredients in a blender or food processor until well combined and smooth. Spoon desired amount of sauce over salad and pass any remaining sauce at the table. Just before serving, add peanuts and beef to top of salad and garnish with basil leaves.

Notes: Much of this recipe may be prepared ahead of time and assembled just before serving. All of the chopping can be done and stored, covered, in the refrigerator for several hours, making this a perfect recipe for entertaining.
