A mix of vegetables and fruit with slices of roast beef and pasta, served with a slightly spicy, Oriental style dressing.
To prepare salad, gently mix all salad ingredients, except peanuts, together and spoon into a large serving bowl or platter. Mix all sauce ingredients in a blender or food processor until well combined and smooth. Spoon desired amount of sauce over salad and pass any remaining sauce at the table. Just before serving, add peanuts and beef to top of salad and garnish with basil leaves.
Notes:
Much of this recipe may be prepared ahead of time and assembled just before serving. All of the chopping can be done and stored, covered, in the refrigerator for several hours, making this a perfect recipe for entertaining.
