Thai Style Quinoa Cucumber Salad

This salad is sure to spice up your next potluck. Coconut, soy sauce and other key Thai ingredients make this a great dish.
 

Ingredients

  • 1 1/4 cups quinoa
  • 2 1/2 cups water
  • 1 cup small dice peeled European cucumber
  • 1 cup small dice mango
  • 1/2 cup sliced red radishes
  • 1/2 cup grated carrot
  • 1/4 cup sliced green onion
  • 1/4 cup snipped mint
  • 1/4 cup crystallized ginger bits
  • 1/4 cup toasted coconut
  • 1/3 cup seasoned rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp green curry paste
  • 1/2 tsp lemon zest
  • Garnish- black sesame seeds

Method

In a 2 quart pan, bring the quinoa and water to a boil. Reduce the heat, cover and simmer 10-15 minutes or till the water is absorbed. Rinse to cool and drain well. Place in a large mixing bowl along with the cucumber and next 7 ingredients. In a small bowl, whisk together the rest of the ingredients till well blended. Toss the dressing with the quinoa mixture to evenly coat. Serve garnished with sesame seeds.
