Taco Thai Spaghetti Salad


Mexican and Thai come together in this unique pasta salad. The dressing combines taco seasoning mix with coconut milk, peanuts, lime juice and herbs.



Ingredients:

  • 1 Tbsp taco seasoning mix
  • 1 1/2 cups unsweetened light coconut milk
  • 3/4 cup chopped roasted peanuts, divided
  • 2 Tbsp lime juice
  • 2 Tbsp snipped mint
  • 2 Tbsp snipped basil
  • 2 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 clove garlic, minced
  • 12 ounces spaghetti, broken in half, cooked according to package instructions, drained
  • 1/4 pound snow peas, cooked till crisp- tender, drained
  • 2 cups shredded Chinese(napa) cabbage
  • 1 green onion, minced
  • 1/4 pound cooked salad shrimp

Method

In a blender container place the seasoning mix, coconut milk, 1/2 cup of the peanuts, lime juice, mint, basil, oil, honey and garlic. Blend till smooth. Place the spaghetti and remaining ingredients in a large bowl. Add the coconut milk mixture and toss to coat. Garnish with the remaining 1/4 cup peanuts.

Notes: A blend of ethnic flavors results in a delicious complexity of taste. A blender makes for a quick and easy preparation. This healthy dish may also be used for a light luncheon or supper dish as well as a side dish to a bigger meal.
