Mexican and Thai come together in this unique pasta salad. The dressing combines taco seasoning mix with coconut milk, peanuts, lime juice and herbs.
In a blender container place the seasoning mix, coconut milk, 1/2 cup of the peanuts, lime juice, mint, basil, oil, honey and garlic. Blend till smooth. Place the spaghetti and remaining ingredients in a large bowl. Add the coconut milk mixture and toss to coat. Garnish with the remaining 1/4 cup peanuts.
Notes:
A blend of ethnic flavors results in a delicious complexity of taste. A blender makes for a quick and easy preparation. This healthy dish may also be used for a light luncheon or supper dish as well as a side dish to a bigger meal.
