Sweet Potato Salad

Update the traditional potato salad by adding apple, raisins and walnuts. Serve this salad as a side dish for lunch or dinner, or take it to your next potluck.
 

Ingredients

  • 4 medium sweet potatoes, peeld and cut into 1 inch cubes (about 4 cups)
  • 1 small red delicious apple, chopped (about 1/2 cup)
  • 2 tbsp dark raisins
  • 2 tbsp chopped walnuts
  • 2 tbsp olive oil
  • 2 tbsp orange juice
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method

In a large saucepan, combine sweet potatoes and enough water to cover. Bring to a boil over high heat, reduce heat to medium. Cook until tender, about 10 minutes. Drain potatoes in a colander. Meanwhile, in large bowl, combine all other ingredients. Mix well. Add sweet potatoes to bowl, toss to coat. Serve immediately.
