Sweet Pork Salad with Cilantro Lime Dressing

A pork tenderloin is cooked in the crock pot with honey, brown sugar, salsa and seasonings, then added to lettuce and served with a dressing.
 

Ingredients

  • 1 pork tenderloin roast
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 can green chilies, pureed
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/3 cup water
  • 1/4 cup favorite red salsa
  • 1/4 cup favorite salsa verde (green)
  • Lettuce:
  • 5 cups romaine hearts, shredded
  • 5 cups iceberg, shredded
  • 1 can black beans, rinsed & drained
  • 1 tomato, chopped
  • 1 avocado, chopped
  • Tortilla chips
  • Shredded cheddar cheese
  • Dressing:
  • 1 bunch cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 3/4 pkg ranch dressing mix (dry)
  • 2 cloves garlic
  • Juice of 2 limes
  • 1/4 tsp hot sauce
 
Method

Cook pork roast on high in crock pot, adding chilies, garlic powder, salt, pepper, onion powder and water. When meat starts to shred (about 3 hours) add honey, brown sugar and salsas. Continue cooking on low until it is completely shredded. To assemble salad use individual serving bowls. Place lettuce in bottom of bowl, add desired toppings (shredded pork, black beans, avocado, tomato, cheese, and/or tortilla chips) and top with dressing. To make dressing place sour cream, mayonnaise, cilantro, ranch mix, lime juice, hot sauce and garlic in a blender and blend until smooth and creamy.

 

Notes: Can omit hot sauce from dressing. Also can add or omit any toppings as desired.
