Sweet and Savory Apple Sausage Slaw

Chicken sausage is sauteed and added to this Dijon dressed slaw salad. The tangy apples really combine nicely with the sausage and Gorgonzola.
Ingredients
- 6 oz sweet apple chicken sausage
- 1/2 teaspoon mild smoked paprika
- 1/4 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 2 cups red apple matchsticks
- 2 tablespoons lemon juice
- 2/3 cups prepared slaw dressing
- 2 tablespoons unfiltered apple cider vinegar
- 1 teaspoon finely minced garlic
- 1 tablespoon Dijon mustard
- 7 cups shredded cabbage
- 3 sliced scallions, white and tender green parts
- 1/4 cup chopped flat leaf parsley
- 1/3 cup crumbled Gorgonzola

Method
Dice sausage and saute in a large heavy skillet over medium high heat. Cook until outside has a nice brown crust and inside is cooked, about 6 minutes. Sprinkle with paprika, salt and pepper. Remove sausage from pan to drain. In a medium large serving bowl, toss apple with lemon. In a small mixing bowl, whisk slaw dressing, vinegar, garlic and mustard. Add to apple and toss in cabbage, scallions, 1/2 of sausage and 1/2 of parsley. Top with remaining sausage, parsley and cheese. If serving later, cover and chill then top with remaining sausage, parsley and cheese at time of serving. Ready in 20 minutes.
