
This surf and turf salad uses shrimp and chorizo sausage, plus beans, corn, olives, pepper-jack cheese, and green chilies in a dressing of mayonnaise, olive oil, lime juice, chili powder, cumin, and jalapeno.
Combine in small bowl mayonnaise, lime juice, cilantro, cumin, jalapeno, chili powder, oil, pepper and salt. Mix well.
Combine sausage, shrimp, corn, olives, beans, cheese, and chilies in large serving bowl. Mix ingredients together. Add mayonnaise mixture. Stir well again.
To Serve: Spread arugula leaves on plate. Top with Surf and Turf Salad on plate. Garnish with dollops of sour cream and chopped cilantro leaves. Serve with your favorite tortilla chips.
