Surf and Turf Mexican Salad

This surf and turf salad uses shrimp and chorizo sausage, plus beans, corn, olives, pepper-jack cheese, and green chilies in a dressing of mayonnaise, olive oil, lime juice, chili powder, cumin, and jalapeno.
 

Ingredients

  • 1/2 cup mayonnaise
  • Squeeze of fresh lime juice
  • 1 teaspoon ground cumin
  • 2 teaspoon chopped fine fresh cilantro
  • 2 teaspoon minced jalapeno
  • 3 teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 2 fully cooked chorizo sausage links, sliced
  • 1/2 lb. medium shrimp, cooked and peeled
  • 1 small can corn, drained
  • 1/2 small black olives, drained
  • 1 cup black beans (drained)
  • 1/2 cup pepper-jack cheese cut into bite-size cubes
  • 1 small can of green chilies
  • 1 cup arugula lettuce leaves
  • Garnish: 6 dollops sour cream and chopped cilantro leaves

Method

Combine in small bowl mayonnaise, lime juice, cilantro, cumin, jalapeno, chili powder, oil, pepper and salt. Mix well. Combine sausage, shrimp, corn, olives, beans, cheese, and chilies in large serving bowl. Mix ingredients together. Add mayonnaise mixture. Stir well again. To Serve: Spread arugula leaves on plate. Top with Surf and Turf Salad on plate. Garnish with dollops of sour cream and chopped cilantro leaves. Serve with your favorite tortilla chips.
