Summer Salsa


Great fruit salsa that adds cilantro and sauted garlic for an interesting twist on a great classic.



Ingredients:

  • 1/2 cup olive oil
  • 3-4 cloves garlic, finely cut
  • 2 medium fresh tomatoes, diced
  • 1/2 cup cilantro, coarsely cut
  • 1/2 mango, peeled and diced
  • 2 cups seedless watermelon, diced
  • 1 orange, 1/2 juiced and 1/2 peeled and diced
  • 1/2 tbsp salt  
  • 1/4 tbsp pepper

Method

In a small sauce pan heat olive oil, add garlic and saute until golden brown. Turn off heat and set aside. Next, combine tomatoes, cilantro, mango, watermelon, diced orange and orange juice, salt and pepper. Finally, add garlic and olive oil and toss.

Notes: This salsa can be virtually added to any dish or simply eaten by itself.
