Summer's Bounty Rustic Avocado Chutney

This colorful mix of corn, crisp bacon, red onion, tomatillos, tomato, avocado and cilantro is flavored with jalapeno, lime, garlic and cumin, and served on lettuce.

  • Servings: 6

Ingredients:

1 Large Ear Fresh Sweet Yellow Corn
2 Tbsp Extra-virgin Olive Oil
2 Jalapeno Peppers
4 slices Thick-cut Black Peppered Bacon, cut in ½" pieces
½ Medium Red Onion, diced
1 Garlic Clove, minced or pressed
3 Medium Tomatillos, husked, cored and diced
⅓ cup Seeded & Quartered Grape Tomatoes
1 Medium Haas Avocado, peeled and diced
¼ cup Chopped Cilantro
1 Tbsp Freshly Squeezed Lime Juice
½ tsp Fine Sea Salt
½ tsp Freshly Ground Black Pepper
⅛ tsp Ground Cumin
6 Medium Boston, bibb or butter crunch lettuce leaves, or hearts of romaine lettuce leaves or red cabbage leaves
1 Lime, cut into 6 wedges for garnish, optional

Directions:

Preheat a gas grill to medium-high. Husk and clean corn, then brush with 1 tablespoon of the olive oil. When grill is ready, place corn directly over the hottest part of the grill. Grill the corn, turning as needed, until charred in some areas, about 10 minutes. Cut the kernels from cob with a sharp knife and place into a medium mixing bowl. Grill the jalapenos until charred, 5-7 minutes. Stem, seed and finely chop the jalapeno, then set aside. In a medium-size heavy heat-proof skillet, cook bacon until crisp. With a slotted spoon, transfer the bacon to paper toweling to drain. Drain the bacon fat from the skillet, wipe skillet with paper toweling and place skillet back on the grill or side burner of grill. Heat remaining olive oil; add onion, garlic and chopped jalapeno. Cook until golden, 8-10 minutes. Add the tomatillos and cook until softened, about 5 minutes. Transfer to bowl with corn. Add tomatoes, avocado, cilantro, lime juice, salt, black pepper and cumin; toss gently to combine. Chill mixture, if desired. To serve, evenly divide mixture among the 6 lettuce leaves and garnish with lime wedge. Serve immediately.
