Summertime Potato Salad

This potato salad mixture combines the cubed, cooked potatoes with cheddar and Jack cheeses, radishes, green onion & eggs in a mayo-type dressing.
 

Ingredients

  • 8 medium red potatoes
  • 4 hard-cooked eggs, sliced
  • 1 green onion, sliced
  • 1/4 cup sliced radishes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 3/4 cup salad dressing or mayonnaise
  • 3/4 cup half-and-half
  • Salt and pepper to taste

Method

Cut potatoes into bite-sized chunks and boil just until fork-tender; drain well. Add eggs, onion, radishes, and cheeses. Stir together salad dressing and milk. Pour over potatoes and turn gently until coated. Add seasonings, cover, and refrigerate 1 hour.
