Stuffed Baked Potato Salad

All your favorite baked potato toppers in a quick and easy salad--cheddar cheese, sour cream, bacon and chives.
 

Ingredients

  • 15 medium red potatoes, cooked and cubed
  • 3/4 cup sour cream
  • 3/4 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped red onion
  • 1/2 lb bacon, cooked and crumbled
  • 1/4 cup snipped fresh chives
  • Salt and pepper to taste

Method

Combine all ingredients in a bowl and mix well. Refrigerate until serving.
