Stuffed Apple Endive Salad

A mixture of chopped tart apple, shredded gruyere cheese, and walnuts is tossed with a dressing that has olive oil, white wine vinegar, cinnamon, nutmeg and pepper, then is rolled up inside 12 leaves of endive.
 

Ingredients

  • 12 endive leaves
  • 1 cup cubed granny smith apples
  • 1/2 cup shredded gruyere or Swiss cheese
  • 1/4 cup chopped walnuts
  • 1/3 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1/4 tsp pepper

Method

Place 12 endive leaves on serving platter. Cut apples into 1/2-inch cubes and place in a bowl. Add shredded gruyere and walnuts. In a separate bowl whisk together olive oil, vinegar, cinnamon, nutmeg, and pepper. Pour half of dressing mixture into apples, walnuts, and cheese mixture. Stir. Spoon apple mixture evenly onto 12 endive leaves. Roll up. Drizzle remaining dressing over platter of stuffed endive leaves to serve.

 

Notes: Any tart, green apple can be used.
