Stephanie's Greek Orzo Salad

This side dish combines cooked orzo pasta and vegetables with a dressing of plain yogurt, olive oil, Dijon-style mustard, honey, garlic and herbs.
Ingredients
- 1 lb Orzo pasta, cooked and drained
- 1 red bell pepper, chopped
- 1 bunch of green onions, sliced OR 1/2 of a red onion, diced
- 1 zucchini, chopped
- 1 stalk of celery, chopped
- 1/2 of an English cucumber, seeded and chopped
- Dressing:
- 1 1/2 cups plain yogurt
- 1/2 cup olive oil
- Juice of 1 1/2 lemons (about 1/4 cup)
- Grated peel of 1 lemon
- 3 Tbs Dijon-style mustard
- 3 Tbs honey
- 1 large garlic clove, cut up
- 2-3 Tbsp fresh oregano
- 2-3 Tbsp fresh dillweed
- 1 handful of fresh flatleaf parsley
- 1 Tbs sea salt or kosher salt (or to taste)
- 1 Tbs fresh ground pepper (or to taste)

Method
Rinse pasta with cold water. Combine with next 5 ingredients in a large bowl. Add Dressing ingredients to a food processor. After dressing is processed, add to large bowl with other ingredients and fold together. Chill.
Notes: Can swap out any of the vegetables, and grilled vegetables would be great as well.
