Spring Cabbage Salad

Lemon juice and white wine vinegar give this cabbage salad a great flavor that is perfect with the apples and cabbage.
Ingredients
- 1/4 cup white wine vinegar
- 2 tbsp fresh lemon juice
- 1/4 cup vegetable oil
- 1 garlic clove, minced
- Salt and freshly ground black pepper to taste
- 3 tbsp Robert Rothschild raspberry honey mustard pretzel dip
- 4 cups cabbage, slivered
- 2 cups carrots, julienned
- 4 scallions, chopped or slivered
- 1 head radicchio, chopped
- 1 green apple, slivered

Method
In a small mixing bowl, whisk together first 6 ingredients to create dressing and set aside. In a large mixing bowl, combine cabbage, carrots, scallions, radicchio and apples. Toss with the dressing. Season with salt and pepper to taste. Serve cold in small salad dishes or dressed in cabbage leaves.
