Ingredients:
| 3 cups | Watermelon, seeded and cut bite sized |
| 3-6 | Green Onions; Thinly Sliced, including ½ of greens |
| 1 | Yellow or Orange Bell Pepper; Seeded, deveined and cut to ¼" pieces |
| ¼-1 cup | Finely Chopped Fresh Cilantro |
| 1-2 | Fresh Jalapeno Peppers; Deveined, seeded and finely chopped |
| Juice of 3 Limes, 3 lemons or 2-3 navel oranges, or any combination | |
Directions:
In a huge bowl, toss ingredients gently until well mixed. Place in refrigerator, covered, for at least 45-60 minutes to allow flavors to meld. Serve well chilled.
Helpful Tips:
Great for a hot picnic day or served alone. Also great for use as a salsa over grilled salmon, tuna or chicken. Just dice melon smaller to 1/4 inch.
