Fresh watermelon with spicy jalapeno peppers, onions and colorful bell peppers--serve as a healthy side dish or as salsa for grilled meat or fish.

  • Servings: 4


3 cups Watermelon, seeded and cut bite sized
3-6 Green Onions; Thinly Sliced, including ½ of greens
1 Yellow or Orange Bell Pepper; Seeded, deveined and cut to ¼" pieces
¼-1 cup Finely Chopped Fresh Cilantro
1-2 Fresh Jalapeno Peppers; Deveined, seeded and finely chopped
Juice of 3 Limes, 3 lemons or 2-3 navel oranges, or any combination


In a huge bowl, toss ingredients gently until well mixed. Place in refrigerator, covered, for at least 45-60 minutes to allow flavors to meld. Serve well chilled.

Helpful Tips:

Great for a hot picnic day or served alone. Also great for use as a salsa over grilled salmon, tuna or chicken. Just dice melon smaller to 1/4 inch.
