|3 cups||Watermelon, seeded and cut bite sized|
|3-6||Green Onions; Thinly Sliced, including ½ of greens|
|1||Yellow or Orange Bell Pepper; Seeded, deveined and cut to ¼" pieces|
|¼-1 cup||Finely Chopped Fresh Cilantro|
|1-2||Fresh Jalapeno Peppers; Deveined, seeded and finely chopped|
|Juice of 3 Limes, 3 lemons or 2-3 navel oranges, or any combination|
In a huge bowl, toss ingredients gently until well mixed. Place in refrigerator, covered, for at least 45-60 minutes to allow flavors to meld. Serve well chilled.
Great for a hot picnic day or served alone. Also great for use as a salsa over grilled salmon, tuna or chicken. Just dice melon smaller to 1/4 inch.
