Spicy Cabbage Noodle Salad

A great side dish for poultry, pork or salmon--buckwheat noodles with red cabbage, cucumber, carrots and pea pods in a light soy-lime dressing.
Ingredients
- Dressing:
- 1/2 cup fresh lime juice
- 3 tbsp chile sauce
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1/2 cup packed mint leaves
- 1/4 cup fresh cilantro
- Salad:
- 1 small head red cabbage, shredded
- 1 English cucumber, chopped
- 1 cup snow pea pods
- 2 large carrots, shredded
- 1/4 red onion, sliced very thin
- 8 ounces buckwheat noodles, cooked and strained

Method
In a bowl, combine lime juice, chile sauce, soy sauce and sesame oil. Stir and set aside. Toss together cabbage, cucumber, snow pea pods, carrots and onion. Add half of noodles to salad mixture. Pour half of dressing over salad and toss gently. Arrange remaining half noodles on top of salad in a decorative swirl and drizzle with remaining dressing. Garnish with torn mint and cilantro leaves.
Notes: Try adding shredded chicken or pork to make a hearty main course. Can substitute rice wine vinegar for lime juice and Thai basil for cilantro.
