Roasted poblano chilies and chorizo sausage give this spinach and pasta salad huge kick of flavor.
Cook pasta according to package directions. Add the pasta to a large mixing bowl, along with the spinach, asadero cheese, sun dried tomatoes, chopped tomatillo, chopped bell pepper, red onion, and chorizo.
Add poblano chiles, rice wine vinegar, garlic powder, salt, and pepper to the base of a blender and puree. With blender running, drizzle in olive oil and process for one minute. Pour vinaigrette over salad and toss well. Chill for 30 minutes before serving. Makes 6 servings
