Southwestern Spinach Salad with Vinaigrette


Roasted poblano chilies and chorizo sausage give this spinach and pasta salad huge kick of flavor.



Ingredients:

  • 8 oz. dry spinach spiral pasta
  • 4 cups fresh spinach
  • 1 1/2 cups asadero cheese, cubed
  • 1 cup sundried tomatoes, soaked in hot water, drained and chopped (do not use oil packed)
  • 8 tomatillos, roasted and chopped
  • 2 red bell peppers, roasted, seeded and chopped
  • 1 small red onion, thinly sliced
  • 1 1/2 cups bulk chorizo sausage, cooked & well drained
  • 2 poblano chiles, roasted, seeded & chopped
  • 1/2 cup rice wine vinegar
  • 1/2 teaspoon garlic power
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/4 cups olive oil

Method

Cook pasta according to package directions. Add the pasta to a large mixing bowl, along with the spinach, asadero cheese, sun dried tomatoes, chopped tomatillo, chopped bell pepper, red onion, and chorizo. Add poblano chiles, rice wine vinegar, garlic powder, salt, and pepper to the base of a blender and puree. With blender running, drizzle in olive oil and process for one minute. Pour vinaigrette over salad and toss well. Chill for 30 minutes before serving. Makes 6 servings
