Southwestern Salad

Ranch dressing with a little salsa makes a creamy topping for this healthy green salad layered with black beans, vegetables and cheddar cheese.
Ingredients
- 2 heads Romaine lettuce, chopped
- 2 tomatoes
- 1 can chickpeas
- 1 cucumber
- 1 avocado
- 4 slices bacon
- 1/2 cup cheddar cheese, grated
- 1 can corn or 2 cups fresh kernels
- 2 green onions, chopped
- 1 can black beans, drained
- 1 package ranch dressing mix plus ingredients to prepare per instructions
- Salsa, to taste
- 2 cups shredded cheddar cheese

Chop one head of romaine lettuce into salad size pieces and place on individual plates. Drain and mix chickpeas, black beans and corn together in a bowl. Chop cucumber, green onions and tomato into diced pieces and add to beans. Sprinkle vegetable mixture over lettuce in desired portions. Peel and slice avocado into slices. Meanwhile, fry bacon until crispy, then crumble bacon over salad. Prepare dressing by mixing ranch dressing mix according to directions. Mix in 1/4 cup salsa with ranch dressing then pour dressing over salad. Top with cheddar cheese and serve with homemade quesadillas.
Notes: This is a hearty delicious salad. Use the desired hotness of salsa for the dressing.
