Shrimp Salad with Lime Dressing


Grilled shrimp, marinated in lime juice, honey and cilantro with mixed greens, corn and tortilla chips.



Ingredients:

  • 1/3 cup fresh lime juice
  • 1 Tablespoon lime zest
  • 1 cup grape oil
  • 6 Tablespoons chopped fresh cilantro
  • 2 Tablespoons honey
  • 1 1/2 pounds large shrimp, peeled and deveined with tail left on
  • 1 medium tomato, cored and cut into thin wedges
  • 1 1/2 cup sliced red onion
  • 2 (10 ounce) bags mixed salad greens
  • 1 (11 ounce) can golden whole kernel Mexican style corn, drained
  • 4 ounces blue tortilla chips

Method

Prepare a medium hot fire on grill. In a blender or food processor mix lime juice, zest, oil, cilantro and honey until smooth. Place shrimp in a 9 inch square glass dish and drizzle 1/3 cup dressing over shrimp. After 10 minutes, place a sheet of aluminum foil on grill. Poke numerous holes in the foil with a fork. Place shrimp on grill and cook until it looses its opaque color, approximately 3 minutes on each side. In a large salad bowl, toss tomato, onion, greens, and corn. Place another sheet of foil on the grill, pour tortilla chips on the foil and toast for 4 minutes, stirring occasionally. Serve salad with shrimp, tortilla chips, and dressing on the side for people to top their own salad as they wish.
