Shrimp-Orzo Salad


This pasta salad combines orzo, shrimp, celery, cucumber, plus feta (if you wish) with a tangy sour cream-mayo dressing flavored with cilantro & dill.



Ingredients:

  • 1 1/2 Cup uncooked Orzo pasta
  • 1 Cup diced Celery
  • 1 Cup diced, seeded Cucumber
  • 1/4 Cup chopped Scallions
  • 1 lb. Cooked Salad-style Shrimp, coarsely chopped
  • 8 oz Crumbled tomato & basil Feta (Optional)
  • Dressing:
  • 1 Cup Sour Cream
  • 1/2 Cup Mayonnaise
  • 1 Cup chopped Fresh Cilantro (or to taste)
  • 2 Tbsp snipped Fresh Dill weed
  • 2 Splashes Worcestershire Sauce
  • Salt & Pepper to taste
  • Lemon Juice (up to 4 Tbsp)

Method

Cook Orzo according to package. Drain in colander and rinse with cold water. In a large bowl combine celery, cucumber, scallions, shrimp, feta (if using) and orzo. For dressing, stir together sour cream, mayonnaise, cilantro, dill weed, Worcestershire, salt, pepper, and lemon juice to taste. Mix dressing into pasta. Cover and chill.

Notes: May use light or fat-free ingredients in the dressing, if you wish.
