Scrumptious Blueberry-Wild Rice Salad

A wild rice and fresh greens salad is topped with fresh blueberries and cubed feta cheese, and tossed with a fresh blueberry vinaigrette.

Ingredients:

Blueberry Vinaigrette:
½ cup Blueberries
¼ cup White Vinegar
¼ cup Honey
6 Tbsp Extra Virgin Olive Oil
Salad:
6 cups Mixed Greens, washed and dried
2 cups Cooked Cold Wild Rice
(no Barley)
1 cup Fresh Blueberries, rinsed and picked over
3 oz Fresh Feta Cheese, cubed or crumbled into small pieces
½ cup Blueberry Vinaigrette Dressing

Directions:

Place all vinaigrette ingredients in a small blender and pulse until combined. Remove and chill until ready to use.

Place the mixed greens on a beautiful platter. Spread the cold, cooked brown rice on top, leaving a 1- to 2-inch border of greens. Add the blueberries and sprinkle the feta on top.

Drizzle about one-half cup of the vinaigrette over the top of the salad. Cover with plastic wrap and chill for 15-20 minutes. Spoon onto salad plates and serve with extra vinaigrette on the side.

Helpful Tips:

This is a great use for leftover wild rice. My daughter prefers goat cheese, which works well too.
