Savory Wild Rice Salad

Wild rice in a red wine vinaigrette, peanuts, scallions, radishes, celery and apples.
Ingredients
- 1 package wild rice prepared according to package directions, completely chilled
- 1/8-1/4 cup extra virgin olive oil
- Splash of red wine vinegar
- 1/3 cup Spanish peanuts
- 1/4 cup green scallion, cut into 1/4 inches pieces (white and green parts)
- 1/4 cup radishes, thinly sliced
- 1/4 cup celery, thinly sliced on bias
- 2 Tbsp minced fresh flat leaf Italian parsley
- Lettuce cups
- Tart apple slices
- French dressing

Method
Mix first 8 ingredients together and spoon into lettuce cups, garnish with tart apples slices and drizzle salad with French dressing.
Notes: A good light dinner or lunch pail entree.
