Savory Asian Sprinach Salad

Spinach leaves are tossed in a sweet creamy dressing for a quick and healthy side dish.
 

Ingredients

  • 12 ounces baby spinach leaves
  • 1/2 cup pumpkin seeds
  • 1/2 cup bacon bits or shredded smoked salmon
  • Dressing:
  • 1/4 cup chopped sweet onion (such as Walla Walla, Vidalia, etc.)
  • 3/4 cup Extra Virgin Olive Oil
  • 1/4 cup mayonnaise
  • 4 Tablespoons Rice Vinegar
  • 4 Tablespoons Tahini Soy Sauce
  • 1-1/2 teaspoons salt
  • 1 teaspoon ground black pepper

Method

To make the dressing: Put the chopped onion and the olive oil in the blender or food processor and blend until the onions "disappear." Add the remainder of the dressing ingredients and blend. Let rest for a few minutes and blend again. Pour dressing over spinach and toss. Sprinkle pumpkin seeds and bacon or salmon over top and serve. Or go all out and add both bacon and salmon!

 

Notes: I developed this recipe during the recent holiday season, when we had visitors of many ages and from various parts of the country. I served it twice, and it was so well received, I am inspired enter it.
