Sauted Chicken Salad

A healthy main dish salad with chicken, red peppers, avocados and lettuce in balsamic vinaigrette.
Ingredients
- 2 chicken breasts
- 1 red pepper, roasted
- 1 red pepper
- Kosher salt
- Pepper
- 2 shallots
- 1 avocado
- 2 cups lettuce
- Dressing:
- 1 cup olive oil
- 1/3 cup balsamic vinegar
- 3 cloves fresh chopped garlic
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp basil
- 1 tbsp oregano

Method
Saute chicken breast for 4 minutes each side then set aside. In same pan, add onions and peppers and saute for 10 minutes on medium heat. Cut avocado in half; add to pan, with each side face down. Season all with salt. Add chicken back to pan. Put lettuce on plate and top with all the sauted ingredients. Whisk dressing ingredients and drizzle over salad.
