Colorful peppers, cucumber, carrots and romaine lettuce lightly dressed with rice wine vinegar, herbs and seasonings.
Peel cucumber, leaving thin green strips of skin on the cucumber. Thinly slice peppers, cucumber, lettuce, carrot and bok choy; place in large salad bowl. Pour rice wine vinegar over salad and mix. Sprinkle with sugar and mix thoroughly. Add seasonings to taste and serve chilled.
Notes:
Add more rice wine vinegar and sugar to taste.
