Salad with Hot Bacon Dressing

This simple salad is a great, flavorful addition to a meal. The flavor of bacon and onion make for a great salad.
Ingredients
- 6 slices good quality bacon
- 1/4 cup cider vinegar
- 2 eggs, slightly beaten
- 1/4 cup sugar
- 2 Tbsp water
- 1/2-1 head Romaine lettuce (depending on size)
- Handful of minced onion (to taste)

Method
Fry bacon and crumble, reserving drippings. In a jar, add eggs, sugar, bacon drippings (cooled, but not solidified), and vinegar. Shake until well blended. Pour dressing into small saucepan. Cook, over moderately high heat, until beginning to bubble and thicken. Take off heat and let cool slightly. Tear lettuce into large bite size pieces. Sprinkle bacon crumbles and onion over. Pour warm dressing over salad and toss. Serve immediately.
