Romaine and Edamame Salad

Edamame or soybeans are combined with chopped green onion, celery, radishes and cucumber, tossed with a dressing with honey, and served on romaine.
 

Ingredients

  • 2 Tablespoons rice wine vinegar
  • 2 teaspoons canola oil
  • 2 teaspoons lemon juice
  • 2 teaspoons honey
  • 1/4 teaspoon black pepper
  • 1 cup cooked and shelled frozen
  • edamame (soybeans)
  • 1/4 cup minced green onions
  • 1/4 cup chopped celery
  • 1/4 cup chopped radishes
  • 1/4 cup chopped cucumber
  • 1 large romaine lettuce heart, washed and drained

Method

In a small bowl whisk together vinegar, oil, lemon juice, honey, & pepper; set aside. Place soybeans, green onions, celery, radishes, and cucumber in a large bowl. Drizzle with vinegar mixture and toss gently to coat all ingredients. Chill for 30 minutes. Chop romaine lettuce and place on a serving plate. Place chilled beans on top of lettuce and serve.
