Raspberry Blush Watermelon Salad

Bibb or Boston lettuce is combined with cubes of watermelon, slices of red onion, and crumbled feta cheese. The vinaigrette dressing is a blended mixture of fresh raspberries, wine vinegar, sugar and oil.
 

Ingredients

  • Salad Dressing:
  • ("Raspberry Blush Vinaigrette")
  • 1/4 cup Red Wine Vinegar
  • 2 Tablespoons Blush Wine (optional)
  • 1/2 pint fresh Raspberries
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon coarse ground Black Pepper
  • 2 Tablespoons granulated sugar
  • 3/4 cup peanut oil
  • Salad:
  • 2 to 3 heads of Boston or Bibb lettuce, washed, drained and torn into pieces
  • 1/2 of a seedless Watermelon, cut into bite-sized cubes
  • Small red onion, cut in half and then cut into thin slices
  • 1 cup crumbled plain Feta Cheese

Method

Raspberry Vinaigrette Dressing: In a food processor place all ingredients except the peanut oil. Blend until combined, then pour in oil in a slow stream. Salad Directions: Place red onion slices in Raspberry Vinaigrette dressing and marinate in the refrigerator 2 to 4 hours. Place the Bibb lettuce in an 11x14x2-inch dish or similar large serving container. Remove Dressing and onions from refrigerator and pour over watermelon cubes; toss until well coated with dressing. Arrange the watermelon, onions and dressing over the Bibb lettuce. Sprinkle crumbled feta cheese over the top and serve immediately.

 

Notes: This wonderfully light salad is as beautiful as it is tasty.
