Pear Salad

Sliced pears are placed on greens and sprinkled with candied pecans and bacon bits. An apple juice and vinegar topping is drizzled over all.
 

Ingredients

  • Apple cider vinaigrette:
  • 1/2 can of frozen apple juice concentrate
  • 1/2 cup apple cider vinegar.
  • 4 cups fresh spring salad greens
  • 1 Anjou pear
  • 1/2 cup coarsly chopped candied pecans
  • 2 Tbsp real bacon bits

Method

Prepare apple cider vinaigrette by combining apple juice concentrate and vinegar; set aside. Rinse and dry spring greens; place 1 cup on each of four salad plates. Sprinkle 1/8 cup (2 tbsp) pecans over greens on each plate; sprinkle 1/2 tbsp bacon on each. Core and thinly slice pear; place 1/4 of the pear slices on each plate over greens. Drizzle vinaigrette over each serving.

 

Notes: This is a very light, crisp, sweet and refreshing salad perfect for spring and summer!
