Peanut-Powered Pacific Rim Salad


Ramen noodles are cooked and combined with celery, onion, water chestnuts, radishes and peanuts. A flavorful dressing of vinegar, soy sauce, lime juice, toasted sesame oil, chili powder, ginger, garlic, and peanut butter is poured over and tossed.



Ingredients:

  • 4-3 ounce packages Ramen noodles, any flavor
  • 1 Tablespoon toasted sesame oil
  • 3 Tablespoons seasoned rice vinegar
  • 2 Tablespoons lower-sodium soy sauce
  • 2 Tablespoons fresh lime juice
  • 1/4 cup smooth peanut butter
  • 1 teaspoon chili powder
  • 2 teaspoons fresh grated ginger
  • 1 teaspoon minced garlic
  • 1/2 cup chopped celery
  • 1/3 cup chopped green onion
  • 1/4 cup drained sliced canned water chestnuts
  • 1/3 cup chopped radishes
  • 1/2 cup honey-roasted peanuts

Method

To a large pot of boiling water add only 2 of the seasoning packages included in the noodles, then add and cook all noodles for 2 minutes. Drain and cool. Meanwhile in a food processor or blender puree the oil, vinegar, soy sauce, lime juice, peanut butter, chili powder, ginger and garlic. In a large serving bowl toss together the celery, onion, water chestnuts, radishes and cooled noodles. Drizzle dressing over and toss just until coated. Lastly, mix in the peanuts.

Notes: This salad can be served right away but tastes better if it sits for a half hour so flavors can develop.
