Pasta Fruit Salad

Small pasta, crushed pineapple, and mandarin oranges are combined with a cooked dressing (which uses the juices of the canned fruits) plus Cool Whip.
 

Ingredients

  • 1 Cup acini di pepe or orzo pasta
  • 1 20-oz. can crushed pineapple
  • 1 11-oz. can mandarin oranges
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 2 tbsp. flour
  • Dash of salt
  • 4 to 8 oz. frozen Cool Whip, thawed
 
Method

Cook pasta according to package directions; rinse in cold water and drain. Drain & reserve juices from pineapple and oranges. In saucepan combine flour, sugar, and salt; stir reserved fruit juices and eggs. Cook until thickened and bubbly, stirring constantly. Pour over pasta, blend well. Cover and refrigerate several hours or overnight. Cover and chill drained fruits. To serve, combine pasta mixture & fruits; fold in thawed topping.
