Pasta Fagioli Summer Salad

The pasta is elbow macaroni; the beans are cannellini. They are tossed together with olives, canned tomatoes, celery, green pepper, and a dressing of olive oil, white wine vinegar, fresh oregano & basil, and crushed red pepper, then topped with grated cheese.
Ingredients
- Salad:
- 2 cans white cannellini beans, rinsed and drained
- 1 1/2 cups elbow macaroni, cooked & drained
- 1/2 cup sliced black olives
- 1 can Diced Tomatoes, Italian-Style
- 1/4 cup EACH chopped celery and green pepper
- 2 tablespoons EACH fresh minced onion and parsley
- 1/2 teaspoon garlic salt
- 1/4 teaspoon crushed oregano
- Dash pepper
- Fresh Herb Dressing:
- 1/2 cup of white wine vinegar
- 1/2 cup of extra virgin olive oil
- 1/2 tsp. EACH sugar and salt
- 1/2 cup EACH fresh oregano and fresh basil, chopped fine
- 1/2 tsp. black pepper
- 1/2 teaspoon crushed red pepper
- Grated Locatelli, Parmesan or Romano cheese

Method
Toss together all salad ingredients. Mix ingredients for Dressing, except the grated cheese. Pour dressing over salad and toss. Sprinkle generously with grated cheese.
