Papaya Platter Salad

Fresh, light and unique--papaya, oranges, watercress and blackberries with Stilton blue cheese and a lemon-honey dressing.
 

Ingredients

  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup honey
  • Pinch salt
  • 1/8 tsp cayenne pepper
  • 1 ripe medium papaya (2 1/2-3 pounds)
  • 1 seedless orange
  • 2 ripe peaches, peeled and sliced thin
  • 2 cup watercress leaves
  • 1/8 cup Moroccan dry cured olives, chopped, for garnish
  • 1/8 cup blackberries for garnish
  • Crumpled Stilton cheese, for garnish

Method

Thoroughly mix together lemon juice, honey, salt and cayenne pepper and refrigerate. Peel, slice and remove seeds from papaya. Peel orange and section into pieces. Peel and thinly slice peaches. (Squirt peach slices with lemon juice to prevent discoloration). Arrange alternate slices of papaya, orange wedges and peach slices in a fan shape on an attractive salad platter. Place mounds of watercress at each end of fan and garnish watercress mounds with black olives, blackberries and Stilton cheese. Drizzle entire platter with chilled dressing.

 

Notes: Serve as a casual luncheon salad, or, an elegant salad to accompany heavier meals. Delightful at barbeques, as well.
