Oriental Cabbage Salad

Chopped cabbage and green onion are tosses and chilled in an oil and vinegar mixture that is flavored with the seasoning packet from ramen noodles. The noodles are added at the last minute to keep them crunchy.
 

Ingredients

  • 1 small head of cabbage, cored and chopped
  • 2 green onions, thinly sliced
  • Dressing:
  • 1/2 cup vegetable oil
  • 3 tbsp. rice wine vinegar
  • 1 tbsp. sugar
  • 2 tsp. sesame seeds
  • 1 package chicken-flavored ramen noodles

Method

Combine cabbage and green onion in large bowl. For dressing, combine oil, vinegar, sugar, sesame seeds and the seasoning packet from the ramen noodles; stir until sugar is dissolved. Pour over the salad. Toss. Cover and refigerate. Break noodles and add just before serving to retain their crunch.

 

Notes: May add cooked chicken breast and serve as a main course.
